Ingredients

  • 2 tbsp (20 g) flax seeds
  • 6 tbsp (90 ml) water
  • 2 cups (240 g) whole-wheat flour
  • 1 tbsp (14 g) baking powder
  • Heavy pinch salt
  • 2 tbsp (28 g) brown sugar
  • ½ tsp turmeric
  • Sprinkle black pepper
  • 2 tsp (6 g) cinnamon
  • cup (80 g) applesauce
  • 2 cups (480 ml) vegan milk
  • 1 tbsp (15 ml) vanilla
  • Fresh fruit for serving
  • Whipped cream for serving
  • Maple syrup for serving

Instructions

  • In a small bowl, mix the flax seeds and water and let the mixture sit for 5 minutes.
  • To a medium bowl, add the flour, baking powder, salt, brown sugar, turmeric, black pepper and cinnamon and give it a good mix until well combined.
  • In another medium bowl, mix the applesauce, vegan milk, vanilla and flax seed mixture until well combined. Slowly add the dry ingredients to the wet ingredients about 1 cup (240 ml) at a time and gently mix until well combined.
  • Preheat a waffle iron and if it is not non-stick, coat it with some oil to keep the waffle mix from sticking.
  • Pour 3⁄4 to 1 cup (180–240 ml) of the waffle mix into the waffle iron and cook until heated through, 8 to 10 minutes (or when your waffle machine alerts you that the waffle is ready). Enjoy with fruit, whipped cream and maple syrup.

Ingredients

For the waffle mix
  • cups (350 ml) unsweetened almond or oat milk
  • 1 tbsp (15 ml) apple cider vinegar
  • 2 apples peeled and roughly chopped
  • cup (80 ml) water
  • 1 tsp vanilla extract or ground cinnamon
  • 2 cups (180 g) rolled oats (gluten-free if needed)
  • 1 tbsp (14 g) coconut oil (solid) plus more for brushing the waffle iron
  • 2 tsp (10 g) baking powder
Topping suggestions
  • Strawberries
  • Raspberries
  • Orange slices
  • Drizzle melted vegan dark chocolate
  • Drizzle grade A maple syrup
  • Vegan whipped cream

Instructions

  • Pour the almond or oat milk into a small bowl and add the apple cider vinegar. Stir and set to one side.
  • Place the apples in a saucepan with the water and vanilla extract. Cook over medium heat for 10 minutes, until the apples have softened. Stir occasionally to prevent them from sticking to the base of the pan.
  • Once the apples have cooked, put them in a blender with the almond/oat milk mixture and the oats, coconut oil and baking powder. Then blend until the batter is smooth.
  • Heat the waffle iron and lightly brush it with coconut oil. Carefully spoon the waffle mix onto the hot waffle iron, spreading it out evenly. Close the lid and cook for 8 minutes. After 8 minutes, check the waffles and, if not completely golden, cook for a further 2 minutes.
  • Once the apple waffles are ready, place them on the table and let everyone help themselves to berries, orange slices, a drizzle of melted vegan chocolate or maple syrup, chocolate spread and vegan whipped cream.

Major breakfast food brand Eggo is adding vegan chicken to its waffle packs for the first time. Eggo is known for its pancakes, French toast, and eggy, meaty sandwiches. But most of all, it’s known for its waffles. 

Now, the 68-year-old company is shaking things up with a new campaign. To celebrate National Waffle Day (August 24), Eggo is giving away 700 vegetarian Chick’n and Buttermilk Waffle combo packs.

Realistic vegan chicken

The vegan chicken is courtesy of MorningStar Farms – both brands are owned by the Kellogg Company. 

The waffles are not vegan, but a spokesperson for Kellogg’s told VegNews that the company is exploring more vegetarian options, as well as plant-based products.

Heidi Ray is the Marketing Director of MorningStar Farms and Incogmeato at Kellogg’s. 

She said in a statement: “We’re always looking for new ways to make vegetarian foods more accessible for everyone, so we’re excited to partner with an iconic brand like Eggo to put a delicious new spin on a beloved dish like chicken and waffles.

“This limited-edition combo pack gives people another opportunity to see how delicious plant-based can be and experience our Chik’n Tenders that look, cook, taste, and tear just like the real thing.”

Ingredients

  • 325 ml plant based milk soy is best
  • 1 tsp apple cider vinegar
  • 225 g self raising flour
  • 1 tsp baking powder
  • ½ tsp. salt
  • 25 g caster sugar
  • 40 g apple sauce
  • 50 g vegan butter melted

Instructions

  • Make sure your waffle maker is preheating!
  • Firstly, pour the apple cider vinegar into the soya milk, give it a stir and then leave to sour for about 5 mins.
  • In a bowl mix together the flour, baking powder, salt and sugar.
  • Once the soya milk has soured (gone a bit chunky) add the apple sauce and the melted butter and mix well.
  • Whisk the wet mixture into the dry gradually and continue adding until it has all been combined and you have a smooth mixture.
  • Spray the waffle maker with an oil-based spray and ladle in the mixture. (be careful not to overfill)
  • Cook for approximately 4 minutes and then serve with berries and syrup.

Ingredients

  • 1 1/2 cup oat flour
  • 1 cup plant based milk add 1/4 extra if the mixture is too thick.
  • pinch of salt
  • 2 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 banana
  • 1 tsp apple cider vinegar
  • 1 tbsp milled flaxseeds

Instructions

  •  Make a flax egg using 1 tbsp of flax seeds with 2 tbsp of water. Let this sit for 5-10 mins.
  • Add 1 tsp of apple cider vinegar to your plant-based milk. Let this sit and turn into buttermilk.
  • Add all your dry ingredients into a bowl, mix well and then mash in the banana.
  • Mix in the flax egg and plant-based milk together.
  • Mix the wet and dry ingredients into one bowl. Don’t over mix! Then add the mixture to a waffle iron. If the mixture is too thick at a bit more plant-based milk. If the mixture is too runny add more oat flour.

  • ½ cup sweet potato (roughly 160grams)
  • 1 cup flour
  • 2 tsp baking powder
  • 1 chickpea 'egg' (4 tbsp chickpea flour with 4 tbsp water)
  • 1 + ¼ cup plant based milk
  • 1 tsp cumin
  • 1 tsp pink salt
  • 1 tsp paprika
  • coconut oil for oiling waffle iron

Instructions

  • Combine all ingredients into a bowl and stir
  • Add the mixture to a waffle maker until the waffles are cooked through
  • Top with whatever you fancy! You can opt for a savoury version, using grilled tomatoes, avocado, hummus, and spinach, or a sweet option using maple syrup, fruit, and vegan yogurt.
